The coffees grown by Mauricio Shattah of Finca La Negrita in Tolima are some of the finest in the world. Marcus first met Mauricio in April of 2018 when he attended one of Marcus’ coffee roasting courses near San Francisco. Immediately Marcus knew there was something different about Mauricio - he brought a singular focus and intensity to his study of coffee.
A trained Oncologist, Mauricio applies scientific rigor to all he does, including producing exquisite coffees from his farm located in a valley near the Volcano Nevado del Tolima.
Finca La Negrita was established in 2012, and receives a short span of direct sunlight (6-7 hours) each day, while a cool breeze from Novado Del Tolima (Tolima Volcano) keeps the climate temperate. This pattern allows for the coffee cherries to slowly, yet fully, develop over time. The end result is a high density coffee with a high sugar content and flavors of fruit compote, lavender, and concord grape.
