Ethiopia Shoondhisa Natural
Tastes Like: Raspberry Jam, Milk Chocolate, Marzipan
We don't purchase many natural coffees each year. It is not because we don't like them, but rather because so many of them are not clean tasting. This natural from the Dambi Uddo station in the hills of Shakiso, Guji is extraordinarily clean. The quality of this coffee is owed to the growers responsible, but perhaps more so to the producer at Dambi Uddo, Ture Waji. Ture focuses on only ripe cherries, slow drying and working only when environmental factors are right for drying cherries. His meticulous work overseeing the dry mill results in a clean, articulated, and super sweet natural we are proud to share with you.
Ture buys cherry from 72 small farmers in the surrounding area. While the norm in Latin America is for farmers to own many hectares with thousands of coffee trees, in Ethiopia, most growers are small landholders often harvesting coffee in their backyard gardens. The average farm size is 2.5 hectares.
