In recent years, farmers have learned to control the processing of coffee in fascinating new ways. This coffee is an example of an ultra clean honey processed coffee, where quite a bit of the flesh from the cherry is left on the seed (aka, the bean) and when it dries it is a dark, almost black color due to the oxidation and fermentation that takes place. All you really need to know is that this process produces a deep, syrupy profile int he cup that you are going to love.
