About This Coffee

Driving through the mountains of vereda La Pradera you are often inside of the clouds. When the sun does shine through, it illuminates what feels like countless shades of green in the hillsides and valleys below. Located in the municipality of Funes in the department of Nariño, La Pradera is almost as far east as you can go before leaving the mountains and descending into the Amazon rainforest. Here, the air is thick and humid and the vegetation lush and diverse. Alongside the road, plantain and banana trees grow wildly, as do peaches, guava, and more. Here, in this land of striking landscapes and generous climate, we find a coffee that we think is just as unique as the place it comes from.
On his finca, La Incora, Marco Antonio Cabrera Erazo grows beans of the Caturra variety at a height of 1,900-2,000 m.a.s.l., he hand-selects only the ripest cherry from the trees, de-pulps it and leaves it to ferment for 12 hours. The drying process, which is the last part of the post-harvest processing in the finca, is done over patios for a period that can oscillate between 6 to 10 days.

Finca La Incora’s relationship is with Azahar Coffee Company, an intentional coffee exporter. They work with small to medium-sized farmers and strictly in Colombia. They do things a little differently: they set a fixed price with their coffee producers, which means stability and a guaranteed cost for quality. Not only do they sell green coffee, but they sell roasted coffee options as well.
