Colombia Aji COE #6 2021
Taste Like: Black Cherry, Peach, Cola, Panela
Jose Herman Salazar has been producing coffee since 2001. Today he owns a 6-hectare farm where he produces Pink Bourbon, Ají, and Castillo. This is the second time he has submitted his coffee to the COE contest.
In 2020 he placed 17th with his Pink Bourbon, and in 2021 he decided to allow the rare Ají, which he named when he discovered the spicy and red pepper-like smell from the cherries while being harvested. This experience awakened his curiosity to validate this profile in the contest. After some genetic research, it was discovered that the Aji is a yet unknown Ethiopia Heirloom variety. (It was recently found that it is an Ethiopian Landrace).
This coffee was fermented for 48 hours in GrainPro bags and dried in African beds. Jose is a curious man who loves his job and expects to keep discovering the fantastic flavors of his coffees.
