This coffee will roast and ship on April 7. 

If you were trying to figure out our favorite coffee varieties you would probably guess either Pacamara or Gesha. You be partially correct, but we don't really have favorites...we do however LOVE Pacamara lots for their body and rich sweetness. This lots is the best of the Pacamara harverst from Finca de Dios, which is run by the Prentice Family, from whom we sourced multiple lots this past year. 

Finca de Dios is a 27 hectare farm in Fraijanes, Guatemala owned and managed by Ellen and Stuart Prentice and their daughter Ashley. Ellen inherited the land from her father, who purchased the farm in 1971 to keep horses and use as a retreat from Guatemala City. Ellen expanded coffee production from just a few hectares to the majority of the farm’s land area, except only for the naturally forested areas which she maintains for biodiversity and wildlife. To this day Ellen continues to manage the farm as its chief agronomist, caring for the health of the coffee trees and shade cover, training workers on selective picking, and overseeing post-harvest processing standards. Ashley has a masters in Coffee Science and Economics and is a certified Q-grader.
