About This Coffee

Greg and Susy Stille, the founders of Monarch Coffee, spent 32 years falling in love with the Hawaiian Islands before they began the great adventure that led them to the Big Island, the home of Kona coffee. They started with very few trees on a modest, two-acre farm on Maui— picking the coffee cherries, hand pulping, milling, drying, and test roasting in small batches. Through those early experiences, their knowledge quickly expanded. Finally, they got the hang of the coffee-making process and grew into a larger farm in Kona on the Big Island of Hawaii known as Monarch Coffee.

Monarch Coffee is an ‘Ohana (family) operation. They run the farm with help from their daughter and son-in-law, Abby and Sal, and whenever friends and family visit. From hand-picking and roasting coffee to implementing sustainable practices, most farm work is done by family members. There is a rich heritage of coffee growing and processing in the Islands. The production of Kona coffee is an art form, part of a 200-year-old tradition.

The Hawaii Coffee Association Annual Coffee Conference was held in Kauai in 2018, with over 100 farms competing. Monarch won the Grand Champion First Place with their Gesha washed Kona Coffee and 3rd place for their Gesha Pulp Natural Kona Coffee at the State of Hawaii Cupping Competition.

Long-standing traditions dictated that most Hawaiian Kona is the Typica variety, descended from Guatemalan stock. However, the founders of Monarch Coffee, the Sille and Munoz families, are pioneers, bringing Gesha and Pacamara varieties to an island known for expensive but somewhat traditional coffees. 

For May 2023, we are excited to find Monarch Coffee back on our rare menu with a new fresh-crop Pacamara variety from Kona. Winners of the Hawaiian coffee competition, these coffees are meticulously grown, harvested by the most highly trained pickers in Hawaii, and processed on the farm in a state-of-the-art facility.

Monarch Coffee constantly innovates, from its agronomy to its processing. The careful selection and classic washed processing (where the fruit and pulp are removed before drying) of this coffee produce an exceptionally clean cup with a clarity of jasmine, black currant, and apricot aromatics.
