Sourcing

Marcus’ friend and collaborator Willem Boot splits his time between the Bay Area and his Panamanian farms, Finca La Mula and Finca La Cabra. For June 2025, I’m thrilled to share lot 13 from Finca La Mula ( “Mule” in Spanish). The name is inspired by Willem’s first visit, which was by mule to this high-elevation forest farm on a remote hillside in Western Panama.

Willem was part of the first group of coffee tasters to experience the now-renowned Geisha Variety on a cupping table in 2004. The Gesha variety originated in Ethiopia, and Geisha coffees grown in the Boquete Valley of Panama, near La Mula, quickly rose to international prominence.

Taste: The Geisha variety brings floral aromatics and complex fruit. Lot 13 is a stunning coffee with both crystalline clarity of flavors and complexity. Look for Bergamot, Black Currant, Cooked Apple, Dark Chocolate, Dried Dates, Fresh fig, Intense lemon aromatics, and Toffee.

Sustainability: The farm is a model of sustainable agriculture, with the coffee trees coexisting with native trees on the steep mountain hillside in a cloud forest on Volcan Baru in Chiriqui in Western Panama. The farm is tended by staff from the Ngöbe-Buglé indigenous population.

Awards: Coffees from Finca La Mula have won the Best of Panama competition, received Good Food Awards, and are globally sought after by fans of rare and distinct coffees.
