Grown at 1,730 meters above sea level in Huila, this coffee develops slowly in the region’s high-elevation climate, allowing sugars to concentrate within the cherry. Monteblanco is located near Pitalito, an area known for producing expressive, high-clarity coffees. The altitude, rich soils, and precise farm management create an ideal foundation for innovative processing.

Sourcing

This lot comes from Finca Monteblanco, led by third-generation producer Rodrigo Sanchez Valencia. Founded in the 1980s and now spanning 18 hectares, the farm operates its own wet mill and drying facilities, allowing for full control over processing. Through rigorous monitoring and experimentation, Rodrigo has developed co-fermentation techniques that elevate both quality and value, producing microlots that showcase the full potential of Bourbon and Purple Caturra.

Roasting

We roast this coffee to a refined medium profile to preserve its vibrant fruit character while enhancing depth and structure. The result is a balanced expression where blueberry aromatics lead, dark chocolate grounds the cup, and a clean mineral finish carries through every sip.
