Marine Layer Dark Roast

The coffee in Marine Layer rotates seasonally. When sourcing this coffee, we have the same commitment to high-quality, complex, and sweet coffees as we bring to everything we serve.

Our current Marine Layer is a single estate coffee from Fazenda Alta Vista in Minas Gerais, Brazil. As the world’s largest produce of coffee, Brazil exports massive quantities of coffee. Fazenda Alta Vista focuses their effort on quality over quantity.

Many coffee varieties turn a deep crimson red when the cherries are ripe, but there is a natural occurring mutation that causes certain trees to produce fully ripe cherries with a yellow skin. Marine Layer contains the beans from these Yellow Bourbon cherries. Harvesting yellow bourbon is a little more difficult and takes more care, so Fazenda Alta Vista trains their harvesters to identify and harvest only fully ripe cherries. They realize that this additional harvesting effort requires training, assuring adequate wages are provided to their team and additional investments in the local communities.

Marine Layer is the perfect coffee for aficionados looking for a darker roast showcasing a toffee sweetness. This coffee is bigger in body and has a sweet caramelized character balanced by the richness of roasted nuts. We develop these beans to the point of perfect balance, showcasing their inherent sweetness without tasting burnt. We source coffees seasonally for Marine Layer, looking for carefully harvested and produced coffees with deep chocolate notes and the complexity required to stand up to a slightly darker roast. The result is a delicious coffee that tastes like dark chocolate, caramelized sugars, molasses, and toffee.
