Grown at 1450 meters in the highlands of Portrerillos in Chiriquí Province, Panama, Finca La Cabra sits on a remote plateau surrounded by forests, rivers, and sweeping mountain views stretching toward the Pacific Ocean. The farm’s unique landscape offers both ideal coffee-growing conditions and the infrastructure needed for meticulous processing and drying. This remarkable setting helps produce coffees with clarity, elegance, and the vibrant character Panama’s finest Geishas are known for.

Sourcing

Finca La Cabra is a model of thoughtful coffee production, combining regenerative farming practices with innovative processing techniques inspired by the wine industry. The farm utilizes advanced fermentation reactors and a two-day carbonic fermentation process, creating precise control over flavor development while using significantly less water than traditional methods. Worker wellbeing is also central to the farm’s philosophy, with state-of-the-art on-site housing ensuring the people behind the coffee are cared for alongside the crop itself.

Roasting

We roast Panama La Cabra to a medium profile designed to highlight the delicate florals and vibrant citrus inherent to Panama Geisha. The result is a refined and expressive cup that shines in pour-over, revealing layers of honeydew sweetness, bright Meyer lemon, and elegant rose aromatics.
